Today, I went to I Love Sushi in Bellevue for lunch. Because of my dietary restrictions after kidney surgery, I can’t eat any raw fish—everything I order has to be cooked. So, I decided on Nabeyaku Udon, a comforting Japanese hot pot-style noodle soup.
The udon itself was hearty and satisfying, and I enjoyed the warmth of the dish. However, the broth was a little too salty for my current low-salt diet. It reminded me how even traditional Japanese dishes, while healthy in many ways, can sometimes be challenging when salt intake has to be carefully managed.
Still, it was a pleasant meal and a nice reminder that even with dietary restrictions, there are always good options to enjoy.
