Picture was taken through the... Picture was taken through the bus window which is tinted.
That is why it is so blue.
There are food tricks in Japan but they much smaller than the one you see in the US. Althouf=gh they are small, they usually do cook inside. In that sense, all the restaurants have much smaller cook areas in Japan than the one in the US.
