Shabu-shabu is a dish in which thinly sliced meat or fish is cooked by dipping it into boiling water or soup by oneself. The name "shabu-shabu" spread when Suehiro in Osaka adopted it for their menu. The origin of the name is said to be the similarity in the way and sound of rinsing with an oshibori.
In China, there is a hot pot called Shuan Yang Rou, which is the original form of shabu-shabu.
