The flavor and fragrance of sake

Sake tasting typically starts by evaluating the color. Most sake products sold today are colorless. Sake brewed today is pressed, decanted, and then filtered further. Fine particles are completely removed before pasteurization and storage. Generally, activated carbon is used for filtration, which fades the color that remained when fermentation-mash was squeezed. By the way, activated carbon is used not to fade the color, but to adjust the fragrance and prevent coloring, bacterial contamination, and excessive aging.   
Sake generates color to some extent, although the color differs. Several factors that generate color in sake are mostly attributed to the ingredients – rice, koji mold, yeast, and water. Color is a natural phenomenon that does not influence the quality of sake, other than high iron content in water that produces a reddish brown color in sake. “Amber,” “golden,” or “bright yellow” sake were deemed valuable until filtration started in the Taisho Era (1912-1926). Even today, these three phrases are used during sake tasting.   
Also, at a time when sake was brewed and stored in wooden buckets, the sake color was praised along with the fragrance of wood. Therefore, despite the use of cedar buckets at the time, a piece of Yoshino cedar was commonly added to store sake.  
The use of activated carbon to filter sake started in the early Showa Era (1926-1989). However, one theory claims the reason is attributable to the production of Ginjo sake that flourished at the time. Active carbon was used to reduce the color of sake since sake competitions at the time tended to rate light colored sake highly. Since light-bodied sake tends to be favored recently, the general impression is that high-quality sake is nearly colorless.   
Therefore, other than sake stored long-term, degradation must be suspected in general sake sold with a yellowish tint, not due to the color of the sake itself. In such cases, many sake products are not stored correctly, thus exposed to sunlight, which impacts the flavor. However, this is not the case for cask sake or aged sake. If sake is stored in cedar containers like cask sake, fungi and bacteria in the cedar can elute into the sake and generate color. Also, the longer sake is stored, the darker the color generated. Therefore, sake aged for ten years is typically amber or bright yellow.

きき酒ではまず色を見ることになっているが、実は現在市販されている日本酒の大半は、ほとんど色がついていないといっていい。現在の日本酒は、上槽・滓引きの後さらに濾過して、微細な固形物を完全に除去してから火入れ・貯蔵されるが、一般に、この濾過の際に活性炭を使用するため、もろみを搾った段階ではついていた色が脱色されてしまうからである。ちなみに、活性炭使用の目的は脱色だけではなく、香味の調整や着色の防止、 火落ち防止、過熟防止などの意義もある。 
日本酒は本来、程度の差こそあれ、着色するものである。着色の要因はいくつかあるが、大半は原料である米、麹、酵母、水に由来する。色がつくことは自然の現象であり、水に鉄分が多いために赤褐色に着色してしまうような場合を除けば、決して酒質を落とすものではない。濾過という工程がなかった大正時代までは、「琥珀色」とか「黄金色」、「山吹色」などといって、多少黄色みがかったものが尊ばれたものといわれる。きき酒用語には現在でも、これら三つの表現が残されている。また、当時は木桶で仕込み、貯蔵していた時代だが、色を称賛するだけでなく木香も好まれていたため、杉材の桶を使っていたにもかかわらず、わざわざ吉野杉の木片を加えて貯蔵することも珍しくはなかったとされる。 
活性炭を使って濾過するようになったのは昭和初期頃からとされるが、その理由は、当時盛んになっていた吟醸酒造りにあったという説がある。当時、品評会では色の薄い酒が高く評価される傾向があったため、活性炭によって色を抜くようになったというのである。最近はとくに淡麗な 酒質が好まれる傾向にあるから、ほとんど無色に近い酒が良質の日本酒というイメージが出来上がっているともいえよう。 
したがって、現在市販されている一般の日本酒で長期貯蔵酒以外に黄色く見えるものは、酒自体の色ではなく、変質による着色を疑ったほうがよい。多くは保管状態が悪く、日光に当たって着色してしまったものだからで、味にも影響があるはずだという。 ただし、樽酒と古酒に関しては別で、樽酒のように杉材の容器に貯蔵した場合は、杉材のテルペン類(菌類や細菌)が酒の中に溶出して薄く着色することがある。 また、日本酒は貯蔵を経るほど色を増すから、10年物ともなると、琥珀色や山吹色になっている。

Sake Nation: “Seasonal Sake – Part 2: Autumn released draft sake ”

This report introduces representative seasonal sake. In this issue, we introduce “Autumn released draft sake” enjoyed in the fall season.
Autum released draft sake is representative of the fall season, long established as a pronoun for seasonal sake within the sake industry.  
Freshly pressed sake is very flavorful today due to the development of modern day sake brewing technology. 
In the past however, freshly pressed sake was often bitter in flavor or too immature to exude sufficient flavor, thus low volumes released as new sake.  
“Autumn released draft sake” is brewed by pressing and pasteurizing sake during the previous winter season, storing until the fall season, then freshly bottling when sufficiently matured without pasteurization during the second round of bottling. Of course, this Autumn released draft sake is still a pronoun referring to seasonal fall sake to date as a very popular seasonal sake product. 
Many sake breweries start selling Autumn released draft sake during the annual Chrysanthemum Festival. Autumn released draft sake is delicious when paired with seasonal dishes such as salt-grilled mackerel pike or taro soup with meat and vegetables. Please enjoy bountiful fall seasonal foods with Autumn released draft sake.  
 
 
酒豪大陸「季節の日本酒②ひやおろし」

日本酒の季節を代表するお酒を紹介していますが、今回は秋の「ひやおろし」です。
ひやおろしは季節を代表する日本酒としては、とても古い時代からあり、日本酒の世界では季節を楽しむお酒の代名詞ともなっています。
現代の日本酒は醸造技術の発展により、しぼったばかりでもすごく美味しいお酒を出せるようになりました。
しかし、昔はしぼったばかりの日本酒は苦かったり、若すぎて味のノリが悪かったりするものが多く、新酒で出すお酒のほうが少なかった時代もありました。
その中でも、前の年の冬にしぼって火入れをしたお酒を秋まで寝かせ、熟度が良くなった頃に、2回目の瓶詰の際の火入れをせずに特別に生詰めした原酒を「ひやおろし」と言って楽しんでいました。もちろん今でもこのひやおろしは秋の日本酒の代名詞で、大人気の季節商品となります。
毎年9月9日(重陽の節句)に発売を開始する蔵元が多く、秋に取れる秋刀魚の塩焼きや芋煮などとあわせて飲むと最高に美味しいです。ぜひ秋の恵みを食材とともにひやおろしで楽しんでみてください。

Chilled sake generates a refreshing flavor, while the aroma of sake is enhanced in heated sake. 

The palate detects the flavor, while the root savors the lingering aftertaste. 

The choice of sake cup can also influence the flavor. 

Sake is typically served in a choco sake cup, masu (wooden, square-shaped box), kikichoko (ceramic cup with a snake-eye pattern on the interior), guinomi (ceramic), Kiriko glass, and wine or flute glasses.   

  

Why sake may not pair well with some foods 


Sake may not pair well with some foods if the pairing produces an unpleasant odor, or if the aroma or flavor is too strong. 

Sake is also used as a condiment to prepare various dishes such as sake hot pots and sake steamed dishes, while sake lees is used as a marinade for fish, to pickle vegetables (Narazuke), etc. Various regional dishes throughout Japan use sake.

味は舌で感じるが、舌の根本では余韻を楽しむ。

相性が悪い理由

酒と料理が組み合わさることで、不快な香りが生じた場合。

どちらかの香りや味が強すぎた場合。


日本酒を調味料として使うこともあるが、日本酒鍋や酒蒸し、魚の粕漬け、奈良漬などいろいろ使われ、日本全国に日本酒を使った郷土料理もある。

Tokyo Jizake Strolling (World Sake Day)

The Japanese celebrate World Sake Day on October 1, marked with various sake events organized nationwide. October 1 is designated as World Sake Day for several reasons. Traditionally, the sake brewing season started in October and continued until September the following year. Therefore, the sake brewing year traditionally started on October 1. 

According to the Chinese zodiac cycle, the rooster is the tenth of twelve animals. Therefore, October is designated as the “Year of the Rooster,” read as “tori” in Japanese, but originally a pictograph indicating the shape of a pot, indicative of sake. October is traditionally the time to harvest new rice, now shifting due to global warming. Therefore, this explanation will no longer be valid to explain why October 1 is designated as World Sake Day.       

Anyway, various sake events are organized throughout Japan to celebrate World Sake Day. I overheard several colleagues questioning not doing anything to celebrate World Sake Day as professionals in the sake industry and decided to help revitalize my local community by arranging the sake specialty shop I manage to collaborate with Taiwanese restaurant “Seventh Son Restaurant,” in the same commercial district, to organize a sake tasting event.    

“Seventh Son Restaurant” serves authentic Taiwanese cuisine in Fudo-dori Shotengai, a commercial district in the Hatsudai district of Shibuya ward, Tokyo; celebrating thirty years in business. Mr. Lin, the owner, is a former soldier of the Taiwanese Army turned chef. His restaurant is featured in various TV segments, such as the entertainment show “Lunch ON!” on NHK World that introduces lunches enjoyed by Japanese businessmen and workers nationwide. 



東京地酒散歩(日本酒の日)

 10月1日は日本酒の日である。それに伴い各地で様々な日本酒イベントが開催される。

何故、10月1日が日本酒の日なのか。それには幾つかの理由がある。まず以前は、酒造りの季節が10月から翌年9月までを区切りとしており、それに合わせて酒造年度が10月1日から始まっていたからである。そして、

十二支の10番目の10月は酉の月であり、日本ではトリと読むが、元来は壷の形を表す象形文字で、酒を意味しているからである。新米の時期的な話もあるが、これはこの温暖化により時期的にズレ始めている可能性が有るので、いずれ日本酒の日の説明としては苦しくなっていくだろう。なにはともあれ、日本酒の日はイベントが多いし、日本酒業界にいながら何もしないのはどうかという言葉もちらほら聞こえてくるので、私の経営する地酒専門店としては、地元活性化に一役買いたいということで、同じ商店街の中に有る台湾料理店「福臨門」とコラボして日本酒乾杯イベントを開催することとなった。この福臨門、初台不動通り商店街に開店して今年で30年

のベテラン料理店で、台湾軍隊から料理人になった林(リン)店主の本格台湾料理が食べられる店である。テレビなどにも度々取り上げられていて、NHKのサラリーマンの昼飯を題材にしたバラエティ番組「サラメシ」で俳優大杉連さんのお気に入りの店としても紹介されている。店主のかけている眼鏡も大杉連さんが亡くなった際に形見分けとして貰った眼鏡とのこと。そんな福臨門を昼間貸し切りにして台湾料理のおつまみコースを楽しみながら日本酒で乾杯をするといった内容。新潟県金升酒造の蔵元の挨拶で始まり、新潟県柏露酒造の純米スパークリング「柏露花火」で乾杯。ミミガーや台湾ピータン、台湾式に味付けした蒸し鶏などが前菜として出てきたが、秋の熟成した日本酒と台湾的な味付けが非常にマッチして皆酒が進む。その後も揚げ餃子や揚げ春巻きなどの揚げ物も日本酒のつまみとして最高の組み合わせだった。メインの豚すね肉と卵と厚揚げの煮込みはもう言うまでもなく最高で、締めの台湾焼きそばは一瞬でお皿から消える程、大人気だった。最後にデザートとして揚げ団子が出てきたのだが、ゴマの風味と滑らかな餡子がデザートと言うよりも日本酒のつまみとしてのポテンシャルで、最初から最後まで台湾料理と日本酒のマッチングを楽しむことが出来た。日本酒の日に日本酒で乾杯するのは当然として、新たな異国の料理との出会いを見つけることが出来た良い乾杯記念日となった。

Sake consumed during festivals

Sake brewing plants equipped to brew sake year-round are referred to as “all-season (sake) brewing facilities,” or 

“all-season (sake) breweries.” Also, brewing sake year-round is also referred to as all-season (sake) brewing. Currently, all major sake producers brew sake in facilities equipped to brew sake year-round.

Currently, competition to consume large volumes of sake is rarely held due to social changes and health concerns. However, ancient Japanese records show “sake competitions” held in the past. One such record is a competition held between eight court nobles in the Imperial Court in 911 AD. Korehira Fujiwara was awarded a horse by Emperor Uda for showing no sign of intoxication after consuming eight rounds of sake served in large sake cups.     

More recently, the most famous example is a sake competition held at the Taishi-kawara riverbed in the Kawasaki ward of Kawasaki city, Kanagawa prefecture? between warriors divided into eastern and western teams on August 10, 1648. The competition was held between seventeen warriors in the eastern team against fourteen warriors in the western team. After a fierce drinking competition that lasted hours, the eastern team won.   

On the other hand, the most famous drinking competition between individuals was held in Senju, the suburbs of Edo city, on October 21, 1815, as documented in “Suicho Chronicles” by Shokusanjin Ohta, who acted as the judge. Large sake cups made available for this competition were the Itsukushima cup (1,000 ml = 1 liter), Kamakura cup (1,400 ml = 1.4 liters), Ejima cup (2,000 ml = 2 liters), Manju-muryo cup (3,000 ml = 3 liters), Ryokumouki cup (5,000 ml = 1.3 gallons), and the Tanchozuru cup (6,000 ml = 1.5 gallons), from which the competitors chose freely.

Three geisha entertainers poured sake into large sake cups held by competitors. Every cup of sake finished by each competitor was witnessed by an inspector and documented by the scorekeeper. The winner was a man named Sahei from Yashukoyama, who finished off sake in a Ryokumouki cup (15,000 ml = 3.9 gallons). 

The grand winner of documented sake drinking competitions was Rihei Koiya, who consumed 35,200 ml (9.2 gallons) of sake at a restaurant in Ryougoku-yanagibashi on March 23, 1817. A more recently renowned sake competition is the “Kumagaya sake competition” held in Kumagaya city, Saitama prefecture in the spring of 1927. An entrance fee of 2.50 JPY allowed anyone to participate. The winner of this drinking competition hailed from Kumagaya city and consumed 21,600 ml (5.7 gallons).   

In addition to drinking competitions over volumes of sake consumed, the Imperial Court also hosted drinking competitions over how fast rounds of sake were consumed ritualistically. One drinking competition was documented as “10 rounds of sake” in the “Chikanaga Chronicles” during the Muromachi period (1336-1573). Twenty competitors were divided into left and right teams of 10 competitors each, with each side competing to finish 5 cups of sake the fastest. 




祭の中の日本酒

年間を通じて酒造りをできるように設備された酒造工場のことを、「四季醸造」または「四季醸造蔵」(略して「四季蔵」とも)という。また、四季を通じて酒の醸造を行なうことも、同じく四季醸造という。現在、大手酒 造メーカーはすべて、この設備を擁する工場で生産を行なっている。

現在は社会環境の変化や健康の問題などから、競技としての大酒飲み競争はほとんど行なわれなくなっているが、日本では昔から、飲み比べの「酒合戦」が催された記録が残っている。 

古いものでは、延喜11年(911)に宮中で行なわれた8人の公家による御前試合があり、大盃8回の巡盃にも平然としていた藤原伊衛が宇多上皇から乗馬を賜っている。 

近世で最も有名なのは、慶安元年(1648)8月10日に川崎の大師河原で行なわれた、東西両軍に別れての酒合戦である。東軍17名、西軍14名による団体戦で、数時問ほど続いた壮絶な飲み潰し戦の末に、東軍の勝ちと決まった。 

一方、個人戦で有名なのは、文化12年(1815)10月21日に江戸郊外の千住で催された千住の酒合戦で、検分役をつとめた大田燭山人が『続水鳥記』として伝えている。この酒合戦で使用された盃は、厳島盃(5合)、鎌倉盃(7合)、江島盃(1升)、万寿無量盃(1升5合)、緑毛亀盃(2升5合)、丹頂鶴盃(3升)という大盃で、どれを選んでもよい。芸者三人が競技者の持つ大盃に酒を注ぎ、一杯飲み干すごとに記録係が記帳し、検分役がこれを見届けるというものであった。優勝したのは野州小山の佐兵衛という男で、緑毛亀杯三盃(7升5合)をあけたという。 

このような大酒飲み競技での最高記録は、文化14年3月23日に両国柳橋の料亭で行なわれた酒合戦で優勝した鯉屋利兵衛の1斗9升5合とされる。 近代に入ってからの酒合戦で有名なのは、昭和2年春に埼玉県熊谷市で催された「熊谷の酒合戦」で、2円50銭の会費さえ払えば誰でも参加できた。この時の優勝者は熊谷の人で、記録は1斗2升であった。 

なお、古く宮中では酒量を競う酒合戦のほかに、儀礼に従った早飲み合戦というのも行なわれており、室町時代に書かれた『親長卿記』には「10度飲み」という競技が記されている。右方、左方10人ずつに別れ、順に5杯の酒の早飲みを競った競技だったという。

Sake Nation: “Seasonal Sake – Part 1: Summer Sake”

Sake is representative of its brewing season, consumed seasonally when the flavor is most savory and delicious. 

Since ancient times, the Japanese custom is to savor seasonal flavors during each of the four distinct and beautiful seasons. 

This report introduces how to enjoy seasonal sake flavors during each season in four separate issues.

Japan endured a scorching hot summer that neared a boiling point this year. In the past, few sake products were released for consumption during the hot summer season. Until recently, the sake industry appeared to yield their summer business to beer products. However, a new genre of “seasonal summer sake” was developed within the last fifteen years. Summer sake is a refreshing draft sake enjoyed during the summer season with an alcohol content of 12 or 13 percent, lower than the usual sake.   

While diluted water is usually added to pressed sake to lower the alcohol content, recent advancements in brewing technology enables “undiluted sake” to be brewed with an alcohol content of 12 percent, the defining characteristic of summer sake. 
Draft sake is subtle in flavor and refreshing for the summer season. Please try this delicious summer sake if you have an opportunity to visit Japan during the hot summer season.  


酒豪大陸「季節の日本酒①夏酒」


日本酒には季節を代表する、その時期にしか飲めない、その時期最高に美味しいお酒があります。

日本には美しい四季があり、古からその季節ごとにおいしさを楽しむ素晴らしい習慣がありました。それを今回から4回に分けてお伝えします。

今年の夏は、日本は本当に暑く、まさに沸騰しているような夏でした。そんな夏に飲むお酒は、実は以前はあまりありませんでした。夏はビールに譲ります、みたいな雰囲気が日本酒業界にはあったのですが、この15年で「夏酒」というジャンルが出てきました。

これは、夏の暑い日にも飲みやすく、普通の日本酒よりもアルコール度数を12%とか13%とかに少し下げた生酒です。

この夏酒の最大のポイントは、普通アルコールを下げるにはしぼってからの割り水で、水を足して薄めるのですが、現代は醸造技術が大きく進歩した結果、12%とかの「原酒」を造ることが可能になりました。

さわやかで優しい味わいの夏に飲む生酒。ぜひ暑い夏の日本に着たら、試してみてください。夏でも美味しく日本酒を飲むことが出来ますので。

Four different types of sake

Sake consists of four different types – Aromatic Sake, Refreshing Sake, Pure Sake, and Mellow Sake. This issue introduces two of the four sake types. 


Pure Sake: Rich, Junmai sake 

Delicious season: Fall to winter 

Serving temperature: Room temperature or lukewarm 

Sake cup: Small glass  

Compatible cuisine: Combination pizza 


Mellow Sake: Golden hue, aged for a long period   

Delicious season: Winter 

Serving temperature: Room temperature or lukewarm, same as brandy  

Sake cup: Brandy glass  

Compatible cuisine: Grilled eel  


Junmai: Brewed from rice, koji mold, and water only 

Honjozo is alcohol added to Junmai sake in small quantity (10%)

Changes according to the rice polishing ratio. The regulation is abolished for Junmai sake. Polished rice shavings are discarded at the brewery’s discretion (rice shavings can be used to make rice crackers and confections).


Various kinds of sake are enjoyed according to the season and event. For example, Toso (spiced sake) is enjoyed celebrating the New Year, yukimi-zake (sake enjoyed watching the snow fall) is enjoyed during the winter, shiro-zake (amazake) is enjoyed celebrating Hinamatsuri (Doll’s Festival), etc.

日本酒には薫酒、爽酒、醇酒、熟酒と4つのタイプがあり今号では残りの2タイプを紹介する。

米の精米歩合で変わる。純米酒だと規定は撤廃されて、ありません、蔵元の判断で、残りは捨ててしまう(お菓子の原料)。


季節や行事にあわせてもお酒は色々あります。

Tokyo Jizake Strolling (an evening of Italian cuisine with sake)

The scorching summer heat just started to ease slightly in Tokyo, yet still too hot to change out of short sleeved shirts in early September, when the “Fourth evening of Italian cuisine and sake” was held at Italian restaurant Karibetei in the Shimokitazawa district of Setagaya ward. Reservations instantly fill to capacity for this very popular event organized once roughly every three months. Seasonal ingredients and sake are selected for each event. For this latest event, fall and summer sake selections were mixed with products available year-round and some fall ingredients to serve many delicious dishes to the guests’ hearts’ content. 

Since the summer heat was still scorching, the course served started with Chilled Peach Soup Topped with Prosciutto, Chilled Bagna Cauda Bagna Freida, and Horse Carpaccio shipped directly from Kumamoto prefecture – horse loin and mane are chewed thoroughly together the local way. Afterwards, Uni (sea urchin) and Fruit Tomato Salad concluded the first half of the course, followed by fall seasonal dishes such as Oven-baked Sarde a Beccafio, Mackerel Pike Sicilian Spaghetti, and Beef Tagliata. As we started to feel full, the meal concluded with Champagne Risotto.     

Champagne Risotto is prepared by pouring champagne with risotto lined around it in the center of a pot. The simmering champagne mixes with risotto, complete with cheese sprinkled at the end, a very interesting feast for the eyes as well.  Lastly, watermelon was served as dessert and the satisfying meal concluded with every stomach full. 


The courses were served with four sake selections from Niigata prefecture -  the well carbonated “SHUKUFUKU Yellow Label” by Sasaiwai Brewery (Niigata prefecture), summer sake “Hakuro Junmai Daiginjo” by Hakuro Brewery (Niigata prefecture), an autumn sake with a lasting aftertaste, “Hiyaoroshi Junmai Daiginjo Takarazukushi” by Kanemasu Brewery (Niigata prefecture), and “Cowboy Yamahai” by Shiokawa Sake Brewery Co. (Niigata prefecture). The four sake selections from Niigata prefecture were followed by two satisfying bottles of sake, the full-bodied and crisp “Honshu-ichi Muroka-Junmai-Ginjo” by Umeda Sake Brewery (Hiroshima prefecture), and the deeply flavorful “Akagisan Junmai Hiyaoroshi” by Kondo Shuzo Co. (Gunma prefecture), concluded with slightly sweet and fruity sake selections such as “Nagatoro Junmai Daiginjo” by Fujisaki Sobe Shoten (Saitama prefecture) and “Ichinomiya TANE Draft” by Ichinomiya Sake Brewing (Shimane prefecture), totaling eight sake selections served two bottles each, totaling sixteen sake bottles consumed in two and a half hours.  


A lot of preparation is needed for this event, but seeing satisfied participants heading home is the motivation to keep going, said Chef Karibe. Participants of various ages in their twenties to sixties attended. The speed at which the food and sake disappeared was incredible. The next event is planned around November. We look forward to seeing the smiles of many participants as they get comfortably tipsy. 



東京地酒散歩(イタリアンと日本酒の夕べ)

 真夏の厳しい暑さが少しだけやわらぎ始めたが、まだまだ半袖から衣替えは出来ない9月の頭に、「第四回イタリアンと日本酒の夕べ」が世田谷区下北沢のイタリア料理店かりべ亭で開催された。この企画は毎回好評で予約もあっという間に埋まる会で、だいたい3か月に1回のペースで開催されている。毎回季節の食材や酒に特化して行われるのだが、今回は秋の酒・夏の酒・通年商品を混在させ、食材も少しだけ秋を意識して、後はとにかく美味い料理を沢山食べて欲しいというコンセプトだった。まだまだ暑い日が続いていたので、料理は冷たい桃のスープ生ハム乗せから始まり、冷たいバーニャカウダのバーニャフレッダ、熊本直送の馬肉のカルパッチョはロースとたてがみを同時に口に入れてよく噛んで食べるといった熊本スタイル。その後、雲丹とフルーツトマトの冷菜と冷たい前半が終わり、オーブンで焼いた鰯のベッカフィーゴ、秋刀魚のシチリア風スパゲッティと秋の雰囲気の料理が進み、牛肉のタリアータでお腹も膨らんできたところで、締めのシャンパンリゾット。このシャンパンリゾットは鍋の中心にシャンパンを置き周りにリゾットを敷き詰め、吹き出したシャンパンがリゾットと混ざり、最後にチーズをかけて完成という見た目にも面白いリゾットである。そしてデザートにスイカを食べてお腹いっぱいで終了。そんな料理に合わせる日本酒は新潟笹祝酒造のガス感の強いスパークリング「祝吹イエローラベル多酸」、新潟の柏露酒造の夏酒、「柏露純米大吟醸生囲い」、新潟金升酒造の落ち着いた秋酒、「ひやおろし 純米大吟醸 宝づくし」、新潟塩川酒造の「願人山廃純米」と新潟が4種、広島梅田酒造場のボディ感の中にキレのある「本洲一無濾過純米吟醸」、群馬近藤酒造の味わい深い「赤城山純米ひやおろし」と飲みごたえがある2本に続き、埼玉藤崎宗兵衛商店の「長瀞蔵純米吟醸瓶火入れ」、島根県一宮酒造の「壱呑屋TANE生酒」とやや甘めでフルーティな酒の全8種類×2本の16本が2時間半でほぼ無くなってしまった。とにかく準備が大変な会なのだが、参加者が皆大満足で帰ってくれるのが、続けていける原動力になっていると苅部シェフは語る。参加者も20代から60代と幅が広い中で、あっという間に料理と酒が消えていく光景は圧巻である。次回は多分11月頃の予定だが、また沢山の参加者と笑顔と酔っ払いに期待したい。

Brewing sake in Japan

Not limited to sake, brewing alcoholic beverages stipulated by the Liquor Tax Act in Japan requires a license. The Liquor Tax Act stipulates “Persons intending to brew alcoholic beverages must follow the necessary process stipulated by Cabinet Order to acquire a license for each type of alcoholic beverage (per each kind for alcoholic beverages of various kinds) to be brewed per each brewery.”  For example, a refined sake brewery seeking to obtain a sake brewing license must file an application with the applicable tax office superintendent listing the ① brewer’s name or business name (of a company), ② The business location of the brewery, ③ Type of alcohol to be brewed (refined sake in this case), ④ Brewing method, ⑤ Anticipated production volume to be brewed in the first year after the license is granted, etc. 

The Liquor Tax Act also stipulates the minimum volume to be brewed because the volume of alcohol anticipated to be brewed in the first year at the brewery to be licensed must surpass a certain volume for a license to be granted. For sake, the stipulated volume is 60 kl. 

Although yeast starters and fermentation-mash are not applicable as alcoholic beverages stipulated by the Liquor Tax Act, both are ingredients required to brew sake, while fermentation-mash can also be consumed as “Doburoku” (home-brewed sake) as is, for which licensing requirements were adopted to prevent illegal brewing. 

Since illegal brewing decreased significantly, the production of koji mold was omitted from the licensing requirements introduced in January 1976. A license is required to brew sake because the high liquor tax levied on sake is an important revenue for the Japanese government. If the licensing requirements are abolished, a plethora of brewers can pose challenges to securing revenue from the liquor tax. A plethora of small-scale sake brewers can especially cause confusion, the reason why a minimum volume of alcohol to be brewed is stipulated.   

The licensing requirements are also vital to uphold sake quality, health, and sanitation standards for Japanese nationals. Although the licensing requirements to brew sake were introduced in 1880, the system is maintained in the revised Liquor Tax Act to date.    

Today, sake is brewed in many countries outside of Japan, a very delightful news in the interest of popularizing sake. Sho Chiku Bai, Ozeki, Gekkeikan, etc., are brewed locally in the U.S., while Asahi Shuzo Co., Ltd. (Iwakuni city, Yamaguchi prefecture), renowned as the producer of “Dassai,” popular in Japan and overseas, released their U.S. sake brand “Dassai Blue” from their first overseas brewery in New York on September 25. The release of “Dassai Blue” could serve as another opportunity to popularize sake.      



日本での日本酒造り

日本酒に限らず、日本では酒税法で定められた酒類を製造するには、酒類の製造免許が必要である。酒税法では、「酒類を製造しようとする者は、政令で定める手続により、製造しようとする酒類の種類別(品目 のある種類の酒類については、品目別)に、製造場ごとに免許を受けなければならない」と定めている。たとえば、清酒(日本酒)の製造免許を受けるためには、あらかじめ、 ①製造者の氏名または名称(法人の場合)、②製造場の所在地、③製造しようとする酒類の種類(清酒)、④製造方法、⑤免許を受けた後一年間の製造見込数量、などを記載した申請書を当該税務署長に提出しなければならない。また、同酒税法では、法定製造数量を定めている。これは、免許を受けようとする製造場での一年間の製造見込数量が、一定の数量以上でないと認可されないというもので、清酒の場合は60 klである。酒母、もろみは、そのままでは酒税法上の酒類に は該当しないが、酒類製造での必須原料であるばかりでなく、とくにもろ みは、そのままの状態で「濁酒(どぶろく)」としての飲用も可能なため、 密造防止等の見地からも免許制度が採用されているという。なお、麹の製造については、密造酒が著しく減少したことを背景に、昭和51年1月 に免許制度からはずされている。 このように、酒造りが免許制になっているのは、高率の酒税が課税されている酒類が、国家財政上重要な物資であるからだ。かりに免許制度を廃止すると、製造者の乱立などによって酒税の確保に支障を来す恐れがある。 とくに、弱小の酒類製造者の乱立は混乱を招く可能性が強い。製造数量の最低限度を設けているのは、そのためである。また、酒類の品質の保持や、国民の保健衛生上の見地からも、免許制度の意義は大きいとされる。 酒類製造に対して免許制度が導入されたのは明治13年からだが、その後の酒税法改正でも制度は維持され今日に至っている。

今日では日本以外の多くの国で日本酒が製造されているが、日本酒の普及という面では非常に喜ばしい事である。米国内には松竹梅、大関、月桂冠などが製造しているが、日本内外で人気の日本酒「獺祭」で知られる旭酒造(山口県岩国市)は、ニューヨーク州にある同社初の海外の酒蔵で醸造する米国ブランド「獺祭ブルー」を、9月25日から販売を開始した。日本酒が更に広がる契機になるかも知れない。

Sake Nation “First Sake Sampling Event Overseas in a Long Time - Part 4: San Fransisco”

After the sake sampling event in Hawaii, I’m heading next to San Francisco in the U.S. mainland.  

My flight from Hawaii lasted just over five hours. I had forgotten that five or six hours of domestic travel time is normal in the states, which made it hard for me to relax during my flight. However, I arrived safely in San Francisco. 

“N.A. Sales Co., Inc.,” a distributor of sake Nanbu Bijin (“Southern Beauty”) in San Francisco, organized the restaurant expo at The Westin Los Angeles Airport for the first time since the Coronavirus outbreak. 

Sake manufacturers and breweries from Hawaii attended, along with breweries from Fukushima prefecture that missed the event in Hawaii but chose to attend the event in San Francisco with great motivation. The cost of living is known to be high in San Francisco, where the economy is not doing well. 

Some areas are known to be dangerous, so I was warned not to stay out and drink late. 

I was under the impression the economy was good in the U.S., and everyone is doing well, which I learned was false. I felt anxious from learning the truth, but my anxiety was quickly dispelled once the sampling event started. Many restaurant professionals attended and sampled the sake, with many restaurants adding the sake to their menu. I feel Japanese cuisine will continue to expand in the Bay Area. 


酒豪大陸「久しぶりの海外での試飲会 その4 サンフランシスコ」


ハワイでの試飲会を終え、次の地はアメリカ本土のサンフランシスコになります。

ハワイから飛行機で5時間ちょっと移動しましたが、アメリカ国内移動で5時間とか6時間とか当たり前なのを忘れて、なかなか機内で落ち着かず過ごしましたが、サンフランシスコに無事に到着しました。

サンフランシスコは南部美人を取り扱っていいただいている「NAセールス」さんが、これもコロナ以来4年ぶりにレストランエキスポをウェスティンエアポートで開催していただきました。

参加したメーカーや蔵元はハワイから皆さん来ており、それに加えて福島の蔵元などはハワイには参加しなかったのですが、サンフランシスコには単独参加という事で、気合を感じました。

サンフランシスコは物価が高くて有名ですが、今現在はあまり景気が良くないとの事。注意事項でも治安もあまり良くないエリアがあるので、とにかく夜遅くまで飲み歩くのは気を付けるように注意をされました。

私の感覚ではアメリカはみんな景気が良いのかと思っていたらそうでもないことがわかり不安でしたが、会が始まったらそんな不安も消し飛びました。たくさんのレストランの皆さんがおいでいただき、試飲して新たにメニューに入れていただいたレストランも多くありました。

ベイエリアはまだまだ日本食が間違いなく発展していくと信じています。
