“The Japan Ginjo Sake Association” with over forty years of history held a new style of sake event that combines a live-stream (two-dimensional) event with an in-person tasting (three-dimensional) event.

Until now, Japanese sake was enjoyed as a personal, physical experience in a three-dimensional world.     

However, this collaborative event was organized with “VTubers” – virtual YouTubers with a large fan base across Japan and worldwide – for both real and virtual sake enthusiasts to enjoy sake together, especially Ginjo sake. Participating VTubers include “Tamaki Inuyama” of “Otokono-ko VTuber,” “Takuma Kumagaya,” caregiver of Inuyama; virtual maid “Mishiro Shirayuki,” and virtual artist “Yuzuru Himesaki.”        

Each of these four VTubers enjoy a large fan base, not only in Japan, but worldwide. 

When The Japan Ginjo Sake Association launched forty years ago, it was unthinkable that traditional Japanese sake breweries would one day collaborate with VTubers to promote their sake products. 

Although conventional customers of Japanese sake are well served, past sake tasting events are no longer sufficient to cultivate a new consumer base for Japanese sake.   

This dreamy collaboration was organized from this new global perspective, especially since these four VTubers were already Japanese sake enthusiasts to begin with.

酒豪大陸「二次元と三次元の融合による新たな日本酒の道 その2」


40年を超す歴史を持つ、日本酒の蔵元の団体「一般社団法人日本吟醸酒協会」が今年、二次元と三次元の融合による新たなお酒のイベントを開催しました。

今まで日本酒を飲む、という事は、三次元に生きる私達のリアルの事でありました。

しかし、今回は日本でもそして世界でも大注目されている「Vチューバ―」の皆さんとコラボすることで、リアルに日本酒を楽しむ人も、ネットの世界がとても大切な人も、どちらも楽しく日本酒、特に吟醸酒を味わってもらおうと考えました。

Vチューバ―は男の娘VTuberの「犬山たまき」さん、犬山たまきの介護者「熊谷タクマ」さん、バーチャルメイドの「白雪みしろ」さん、バーチャルアーティストの「姫咲ゆずる」さんです。

4人とも熱心なファンが大勢いるVチューバ―で日本だけではなく世界にファンがいます。

そんな4人と、日本の伝統産業の酒蔵が一緒に活動するなんて、日本吟醸酒協会が発足した40年前には想像も出来ませんでした。

日本酒の従来のお客さんはとても大切にしていますが、新たなファン層の開拓、という意味では今まで通りの試飲会をしていては人は集まりません。

新たな世界観の中で、しかもVチューバ―の4名はもともと日本酒大好きという事もあり、今回夢のようなコラボレーションをさせていただきました。

ではどのような事をしたかは、また次回お話ししたいと思います。

The production volume of Japanese sake has been dropping continuously in Japan to date since 1975.
To the contrary, production volume of premium sake like “Ginjo” and “Junmai” are continuing to increase.
However, Japan’s population is starting to decline, with less opportunities to consume alcohol in part due to the aging population. Getting Japan’s population to consume alcohol is getting more difficult in this day and age. Despite the demand for sake increasing overseas, the production volume is not that high, another challenge to tackle since not all breweries export sake.
In this predicament, breweries industry-wide joined forces and founded “The Japan Ginjo Sake Association” to introduce flavorful Ginjo sake throughout Japan.
Founded in 1980 before premium sake was launched, the association celebrates 41 years since their foundation.
The Japan Ginjo Sake Association reflected on their long history of 40 years and organized the tasting event, “Enjoy! Ginjo Fair,” to take on new challenges against the Coronavirus pandemic.
This new type of tasting event is the first in the world to feature a VTuber (virtual YouTuber) to combine a live-stream (two-dimensional) event with an actual tasting (three-dimensional) event to introduce the appeal of Ginjo sake.

日本酒は1975年あたりから今日までずっと日本国内では右肩下がりで生産量が減り続けています。
そんな中でも「吟醸酒」や「純米酒」といった特定名称酒は逆に今でも伸び続けています。
しかし、日本の国の人口はすでに減少し始め、高齢化によるアルコール摂取の機会が減ったり無くなったりする人も増えており、日本国内で日本酒を飲んでもらうのはとても難しい時代になってきました。
その分を伸び続けている海外で賄えるかと言えば、そこまでではなく、全ての蔵が輸出をしているわけでもないので、これもまた難しい問題となっています。
そんな中、日本酒の世界の中ではいち早く蔵元が集まり、日本中に吟醸酒という素晴らしい酒がある事を伝えたいと立ち上がったのが「一般社団法人日本吟醸酒協会」です。
実に、特定名称酒制度が立ち上がる前に1980年に結成され、今年で41年目になります。
そんな、日本吟醸酒協会が今年、40年の長い歴史を振り返りながら、さらにはwithコロナの時代に向けて新たな挑戦を行いました。
それが、エンジョイ吟醸酒フェアというイベントでした。
このイベント(試飲会)は、世界初の二次元(Vチューバ―)と三次元の融合による、新たなカタチのイベントとなりました。

I’m often asked by Americans, “I often use wine for cooking, but can I also use Japanese sake?” Japanese sake contains many umami flavors not found in wine, so it’s great that they can be used in anything.
Eliminating odors
Of course, sake is not only effective in eliminating odors from fish and seafood, but also from pork and lamb. Of course the odor dictates lamb meat, however, when adding Japanese flavor to your cooking, add Japanese sake to any food when the odor is too strong, then leave it for approximately two minutes for the odor to disappear.
Effective in softening proteins
Placing chicken breasts, red beef, and / or meat for stew in a zip lock bag filled with sake prior to marinating eliminates the dryness from the meat and adds flavor. Sake greatly enhances the flavor of meat for barbeque and yakiniku.

Adds umami flavor
From broiled dishes to soup dishes, Japanese sake is useful in a variety of dishes, as our readers know. Surprisingly, Japanese sake also enhances the flavors of Western soup, especially in seafood, along with pasta and various other dishes. Please give it a try. Actually, sake is also great when used even in instant ramen noodles!

Japanese sake is great for cooking
Sake for cooking or Junmai sake is great for food preparation. While Ginjo and Daiginjo are great for drinking, Junmai is better suited and more effective for cooking due to it’s higher concentration of umami flavors.

料理酒や純米酒がよい。吟醸、大吟醸酒は飲むのには良いが、料理としての効能は旨みが多い純米酒がベターである。

Enjoy sake more casually

Japanese sake is still a largely unfamiliar beverage to American consumers.
Ninety percent of sake is consumed in restaurants, indicating the unfortunate reality that sake is still far from being casually enjoyed in private homes and parties.

One of the reasons is because the true flavors of sake and how they’re enjoyed is not widely introduced. Therefore, to American diners, sake is still a unique beverage to be enjoyed at local sushi bars. Also, because the prices can be at times higher, products may not be lined visibly on store shelves and information may be lacking on labels, which may be contributing to this issue.

In this issue, I will give you a simple overview of how to select sake.

First, it’s important to decide what menu selections to enjoy the sake with. Similar to how wine enhances the foods you eat, sake is also to be enjoyed during meals.

Meat dishes: Junmai or Junmai Kimoto is recommended (from Kyushu, Tohoku, Kanto, Hokuriku or Nada regions)

Chicken dishes: Ginjo class (from Hiroshima, Niigata, Nada, Hokuriku, and Kanto regions) is recommended

Fish dishes: Ginjo and Daiginjo class (Niigata, Hiroshima, Shikoku, Kyoto regions) are recommended.

Of course, flavoring and preparation methods will influence your choice of sake, but first, it would be interesting to sample sake by region.

“First in the world! Ginjo Sake Sampling Event Held at the United Nations Headquarters: Part 4”

In the previous column, we introduced the background that led to the Ginjo sake-sampling event held at the United Nations (UN). To hold the Ginjo sake sampling event at the United Nations headquarters means the invited guests were not local American consumers walking down the streets of New York, but representatives from 193 nations serving as delegates to the United Nations at the United Nations headquarters in New York, where the 193 representatives gathered in one place, which aligned with the Japan Premium Sake Association’s goal to “promote Ginjo sake to the world.”

Association members faced difficulties while planning the Ginjo sake-sampling event held at the United Nations (UN). However, since the Japanese government graciously assumed the role of “joint organizer,” the arrangements were easily made as the association “organized the Ginjo sake sampling event representing Japan.” Further research revealed this Japanese sake sampling event was the “first held in the world” at the United Nations headquarters, organized by the Japan Premium Sake Association literally representing Japan to accomplish this feat.

The association was highly motivated to ensure this event was successful as each member would be wearing the uniform representing Japan, and took many hours to arrange and coordinate with the UN Side in preparation for the day of the event.

Although many of the guests from around the world had never tried Japanese sake before, the guests started to understand the appeal of Ginjo sake as the event progressed and became very lively. Although guests rarely stay at these diplomatic parties until the end, nearly 100 guests captivated by the appeal of Ginjo sake remained even after the time passed for the event to end, wanting to listen to the sake brewers speak. The guests reluctant to leave until the very end left a lasting impression with the event organizers.

As representatives of Japan, the organizers made a significant accomplishment by arranging the first Ginjo sake-sampling event at the United Nations headquarters.


「世界初!国連(UN)本部での吟醸酒の会 その4」

前回のコラムでは、国連(UN)での吟醸酒の試飲会が決まった経緯をお話しました。国連本部で試飲会をするということは、招待するお客さんはニューヨークの街を歩いているアメリカ人ということではなく、国連本部に籍を置く、世界193か国の代表団の皆さんをご招待する、ということで、アメリカでの試飲会、というのではなく、場所はたまたまアメリカニューヨークですが、国連本部という場所は世界193か国の方々が一堂に集まる場所でもあり、まさに私たち吟醸酒協会が「世界へ吟醸酒のPR」という考えと合致しました。

では実際に国連(UN)での吟醸酒の試飲会を計画していくと、難しい問題もたくさん出てきました。しかし、日本国政府が「共催」の立場をとってくれていたので、非常に動きやすく、私たちはまさに「日本を代表して酒の会をする」という立場になってきました。さらに調べていくと、国連本部内での日本酒の試飲会は「世界初」で、まさに世界初の事業を日本を代表して行う吟醸酒協会という、何とも大きなお話になってきました。

私たちは日本代表のユニフォームを着てこの事業を行うのだから、絶対に成功させなければいけない、と意気込み、準備にもとても長い時間をかけて、国連側と調整し、やっと当日を迎えることになりました。

事前の申し込みでは世界193か国の代表の皆様300名近くが来るということで、大変な人数が来ることがわかりました。さらに、国連に勤める国連事務総長はじめ、事務方の皆さんも参加したいと、ということで、350名近い参加者になりました。

In the previous column, Naotaka Miyasaka, 7th President of Japan Premium Sake Association wrote the association had set sail with the goal to establish Ginjo sake worldwide.

No brewery objected to his opinion, and I was highly anticipating the future of Japan Premium Sake Association.

The current political climate also provided support to Miyasaka’s ambition, as the Japanese cabinet under the Prime Minster Abe’s Administration just approved the project “Enjoy Japanese Sake,” setting the course to promote the export of Japanese sake overseas at the national level.

Currently, this movement is now moving forward as “Cool Japan” to create opportunities for sake breweries throughout Japan to export their sake products overseas, to position Japanese sake as “Japan’s traditional culture” as a nationwide effort led by the Japanese government to proudly export Japanese sake to the world as a national treasure.

Japan Premium Sake Association’s aim to introduce Ginjo sake to the world to establish Ginjo sake overseas was recognized by the Japanese Government at a time when efforts export of Japanese sake overseas are supported at a national level in Japan, which resulted in gaining support from the Japanese government.

In this climate, days of reflection continued on how the Japanese Premium Sake Association will introduce “Ginjo” sake to the world, how to kick-off the initial undertaking, for which I also joined the discussion team to simulate ideas on how to kick-off the business that would stun the world with awe.

During these discussions, I noticed my colleague from my hometown of Iwate prefecture among the Japanese government representatives to the United Nations (UN) and consulted him, which led to the proposed idea of holding a Ginjo sake sampling event at the United Nations headquarters.

I was rather in doubt at first, asking “Could we really do something like that?” But as the discussion continued, we realized it was possible, which led to the sampling event to promote Ginjo sake to the world from the United Nations (UN) headquarters.

「世界初!国連(UN)本部での吟醸酒の会 その3」

前回のコラムでは、吟醸酒協会第7代の宮坂理事長が、吟醸酒の世界定着化、を目標に掲げて新しい吟醸酒協会が船出したと書きました。

この意見については反対の蔵元はおらず、新しい吟醸酒協会に私も大いに期待をしておりました。

そんな宮坂理事長の想いに時代も味方をし、その当時、安部政権では国家戦略会議において、「ENJOY JAPANESE KOKUSHU(國酒を楽しもう)」プロジェクトが閣議決定され、国家レベルで日本酒の海外輸出を推進していく流れが整っていました。

現在ではこの運動は「クールジャパン」となり引き継がれています。この流れは、日本中の酒蔵に海外輸出の機会を創出し、国を挙げて日本酒を「日本の伝統文化」と位置付け、世界に誇る日本の宝として輸出に取り組んでいく事を国が先導して行っていく、ということになります。

このような国家レベルで日本酒の海外輸出を応援している時に、まさに吟醸酒協会が海外で吟醸酒の定着を目標に、世界に向けて発信していく、という方針はすぐに日本国政府に伝わり、日本国政府からも応援を頂ける手筈となりました。

そんな中で、吟醸酒協会が「吟醸酒」を世界へ向けて発信する、最初の事業をどのようにしていくか、それを模索する検討チームに私も所属し、吟醸酒協会にしかできない、何か世界を「アッと」驚かすような事業が出来ないか、考える日々が続きました。

そんな中で、国連(UN)の日本国政府代表団の中に、岩手出身の私の仲間がおり、相談したところ、是非国連本部で吟醸酒の試飲会をしたらどうか、という話になりました。

最初は「そんなこと出来るの?」と半信半疑でしたが、話を進めていくと、どうやら可能である、ということになり、国連(UN)での吟醸酒を世界にPRする試飲会を開催することになりました。

The previous column detailed the first Japanese sake tasting event in the world held at the United Nations (UN), organized jointly between the Japanese government and Japan Premium Sake Association, and how the Japan Premium Sake Association was founded. Founded with forty-three member sake breweries in 1981, the Japan Premium Sake Association boasted over eighty sake breweries during its peak membership in the nineties, capitalizing on the organization's influence to promote the benefits of Ginjo sake throughout Japan through large-scale sampling events, etc.

The association's achievements are now evident in the sake category "Ginjo Sake" found today in every department store and restaurants throughout Japan, with Ginjo sake generally recognized as "high-quality sake" among other types of Japanese sake.

As the Japan Premium Sake Association boasts a long history, the necessity of working together as an association started to decline in recent years as Ginjo sake became established in the market. Therefore, the main events for the association today is the large-scale sake sampling event held in the spring and fall in Tokyo, in the fall in Osaka, and once every two years in Sapporo.

Needless to say, the predecessors played a vital role in establishing Ginjo sake throughout Japan. However, the association's seventh Chairman Naotaka Miyasaka of sake brewery "Masumi" in Nagano prefecture stated during his speech on the association's general policies, that the association's new mission based on the achievements of predecessors is no longer limited to domestic efforts, but to promote the consumption of "Ginjo sake" worldwide, accelerating efforts to promote Ginjo sake for worldwide consumption.

前回のコラムでは、世界初の国連(UN)での日本国政府と吟醸酒協会が共催で行った酒の会について、吟醸酒協会という団体の生い立ちについてお話させていただきました。1981年に43社の蔵元でスタートしたこの吟醸酒協会は、一番加盟蔵が多かった90年代には80以上の蔵が加盟し、日本国内へ吟醸酒の素晴らしさを、大規模な試飲会などを通して、団体の力を持って伝播していきました。

その功績は、今では日本国内どこのデパートでも、飲食店でも「吟醸酒」というカテゴリーのお酒を見ることが出来るほど一般的になり、吟醸酒は日本酒の中でもとりわけ「品質の高い酒」と一般認知されるようになりました。

このように、長い歴史を誇る吟醸酒協会ですが、ここ数年は吟醸酒の定着化と共に、団体で行動する理由が減ってきており、春と秋に東京で開催する大規模な試飲会と、秋に大阪で、2年に1度札幌で開催する大規模な試飲会が主な事業となっておりました。

確かに私たちの先代の努力で、吟醸酒は日本国内に定着化して一定の役割は達成されたのですが、第7代の理事長で長野県の「真澄」醸造元の宮坂直孝氏は、所信表明演説で、先代達が築き上げてきた歴史をしっかりと踏まえながら、国内にとどまらず、世界で今度は「吟醸酒」を定着化させていくことこそが吟醸酒協会の新しい使命である、とお話し、吟醸酒の世界定着へ向けた取り組みを加速化させることになりました。

The first Ginjo event in the world was held at the United Nations headquarters in New York several years ago. This was the first Japanese sake event held in the world inside the United Nations headquarters by the “Japan Premium Sake Association,” of which I’m also a member, jointly with the Japanese Government.

To briefly describe the background that led to this first Ginjo sake event held at the United Nations in the world, the organization “Japan Premium Sake Association” (of which I’m a member) was founded in 1981 with an ambitious goal to make Ginjo sake widespread and casually enjoyed throughout Japan, at a time when Ginjo sake was produced only as submissions for sake competitions, even in Japan.

Sake in the Japanese market at the time consisted mostly of sake brands advertised in commercials produced by major sake producers. At the time, sake was distinguished mostly as first or second grade sake, with special-designation sake such as Junmai not yet distributed.

At a time when sake was not named according to the production method or sake ingredients, most sake such as Ginjo and Junmai were all classified as “second grade.”

The National Tax Administration Agency sponsored the only competition for domestic sake production techniques in Japan at the time, the “Annual Japan Sake Awards.” The sake production techniques used for the Daiginjo recognized with the Gold Prize was used on a trial-and-error basis to produce sake that would sell in the market.

While this was an impossible feat for one company alone, forty-three breweries awarded the Gold Prize during the Annual Japan Sake Awards gathered at the time to make quality Ginjo sake widespread in the domestic market.

酒豪大陸 「世界初!国連(UN)本部での吟醸酒の会 その1」

ニューヨークにある国際連合(国連 UN)本部で、世界初の吟醸酒の会が数年前に開催されました。国連本部内での日本酒のイベントは世界初で、その世界で初めての酒の会を私も加盟する「日本吟醸酒協会」という団体と、日本国政府との共催で行いました。

この世界初の国連での吟醸酒の会が開催されるまでの経緯についてお話させていただきますと、私たちが所属する「日本吟醸酒協会」という団体は、1981年に発足し、まだ吟醸酒が日本国内でも鑑評会の酒でしかなかった時代に、吟醸酒を日本中で普通に飲めるように普及させていこう、という大きな目標を掲げました。

その当時の日本国の日本酒は、大手メーカーの大量導入されたCMのお酒がほとんどで、まだ純米酒や吟醸酒などの特定名称酒が流通しておらず、ほとんどすべてが「1級」「2級」と言った級別で区分けされていました。

製造方法や、原材料によって名前を名乗ることが出来ない時代で、今の吟醸酒や純米酒などのお酒は全て「2級」に分類されておりました。

そんな中、当時は国税庁が主催していた、日本で結一の日本国内の日本酒の技術コンテスト「全国新酒鑑評会」というものがあり、そこで金賞を受賞した大吟醸の技術を使って作った酒を何とか市場で売れないか、試行錯誤していた時代でした。

1社では出来ませんが、全国新酒鑑評会金賞受賞の蔵元が43社も当時集まって、この素晴らしい吟醸酒を世の中に広めていこうと立ち上がりました。

Japanese sake is a drink that Americans still cannot get used to.
Majority of Japanese sake sales are from restaurants, and unfortunately sake is still not a beverage that people in their home or at home parties like to casually consume.

The reason is that, due to the real taste and drinking method not being introduced, Japanese sake 'Saki' is probably placed as a special drink that Americans consume when they visit a sushi bar. Also, when you look at any label, introduction of taste and drinking method is not explained in English in detail. Compared to wines the prices are high, and product display method in the market is hard for consumers to understand.

Well, it will be every simple but let me teach you a simple selection method of Japanese sake.

To start, it is important to decide which you want to pair the sake with. I would like you to understand that Japanese sake is an alcohol that is consumed during a meal to increase the food's flavor while eating like wine.

Beef dishes:
Junmai or Junmai-kimoto made in Kyushu, Tohoku, Kanto, Hokuriku, and Nada is recommended

Chicken dishes:
Ginjo class made in Hiroshima, Niigata, Nada, Hokuriku, and Kanto is recommended

Fish dishes:
Ginjo class, Daiginjo class made in Niigata, Hiroshima, Shikoku, and Kyoto is recommended

Certainly, depending on taste flavoring and cooking method, the sake you pair it with be different, but for the time being I think it will be fun to experience the pairing in different regions.

Mizbasho Ginjo from Gunma prefecture.

This item is perfectly balanced in acidity, taste, and aroma. It goes well with chicken dishes to thick flavored fish dishes.


日本酒をもっと気軽に

日本酒は、まだまだアメリカ人にとって馴染みの薄い飲み物である。
日本酒の消費の大半はレストランであり、まだまだ家庭やホームパーティーで気軽に楽しむ飲み物には、残念ながらなっていない。

その理由は、まだまだその本当の味や飲み方が紹介されていないため、日本酒(サキ)はアメリカ人にとってスシバーに行った時に飲む特殊な飲料の位置づけがあるためであろう。また、どのラベルを見ても英語できちんと味や飲み方の紹介がされていない。ワインと比べると価格も高く、マーケットでの商品陳列方法も消費者にとって分かりにくい。

さて、今回は大雑把ではあるが、日本酒の簡単な選択方法をお教えしよう。

まず、合わせたい料理は何かを決めることが重要。日本酒は、ワインと同じく料理を引き立てる食中酒だと理解していただきたい。

牛肉料理:
純米や純米生もと造り(九州、東北、関東、北陸、灘産)がお勧め。

鶏肉料理:
吟醸クラス(広島、新潟、灘、北陸、関東産)がお勧め。

魚料理:吟醸クラス、大吟醸クラス(新潟、広島、四国、京都産)がお勧め。

もちろん、味付け、調理方法によって合わせる酒は異なってくるが、とりあえずは、産地によって試してみるのは面白いのでは。
